Pâté of fresh mushrooms and aloe vera with vita7 black garlic

Ingredients

  • 3 peeled vita7 black garlic cloves
  • 1 kg various fresh seasonal mushrooms
  • 2 shallots
  • 50 ml white wine (Pedro Ximénez)
  • 150 g aloe vera leaf
  • 50 ml extra virgin olive oil
  • Pinch of salt
  • Pinch of mixed pepper

Preparation

Peel the aloe leaf, completely remove the green skin, and use only the gel.

Chop the gel into small pieces and let it soak for a day. Change the water several times so that the aloe vera gel loses its bitterness and aloin.

The next day, take the gel out of the refrigerator, soak it in mineral water and a few drops of lemon juice, and put it back in the refrigerator.

Peel and dice the shallots, cover them with olive oil in a bowl, and let them soak.

Clean the mushrooms, finely chop them into small cubes, mix them with the shallots, and salt everything.

Add the aloe vera and sauté everything.

Add the three diced vita7 black garlic cloves and season everything with white wine.

Once the mixture is reduced, mash everything, mix well with some olive oil, and re-season with salt and pepper.

Refrigerate until the mixture has the consistency of pâté.

Serving Suggestion

Heap the mushroom pâté in small round portions on a board, garnish with edible flowers, red and green basil.
